Discovering a Whole New World of Chocolate

A defining moment for me and my journey with Chocotastery, was when one of my students, raised her hand to share that after she had tasted the Letterpress Chocolate - 70% Ashanti,  Ghana bar that, “it was the best chocolate I ever had in my entire life”. It made me feel so accomplished, fulfilling on my mission and truly making a difference.

Guatemala Chocolate Tasting to Get Ready for Dallas Chocolate Festival

Date of tasting: 9/6/2018 - Enroute to Dallas Chocolate Festival This morning I pumped myself up with a Guatemala chocolate tasting as I started my journey from NJ to Dallas, Texas for the Dallas Chocolate Festival. I started off my tasting at Newark airport a little bit before 6am waiting for my flight to Dallas. The first chocolate I tasted was Sirene Chocolate - Guatemala - 73%. Sirene Chocolate is based in Vancouver, British Columbia in Canada.  The chocolate was dark brown in color and mid to loud snap. Thee was a big cocoa aroma that I smelled right off the bat. Georgia Ramon - Carolina Reaper

Chocolate Maker - Georgia Ramon from Bonn, Germany Bar Name - Carolina Reaper This is a 70% Dark Chocolate with Carolina Reaper, currently one of the hottest chili peppers per the Guinness Book of World Records. The Carolina Reaper pepper has on average a scoville rating of 1,569,300. This is a pepper meant for a chili head. If you cannot tolerate a lot of spice, this may not be the best inclusion bar to taste. How Chocolate Has Molded My Life

Before I start to share my chocolate bar experiences I thought that it would be best to share some of the memories I had growing up and some of the defining chocolate moments in my life. When defining moments occur for us we never really know what their impact will be as we go on to live life. We think we know but some of them really could be the jumping off point that defines our calling to a craft.  One of my most memorable experiences around candy is a memorable collage of moments around M&Ms with my dad. I want to welcome you to our blog. This portion of the website is where I will share my chocolate tasting experiences. It is merely subjective. I am not sharing my chocolate experiences to persuade you whether or not to buy a certain chocolate, tell you a chocolate is good or bad, follow a certain chocolate maker or like a certain type or origin of chocolate.
